Pieology elevates pizza to a science, just as its name implies. The store essentially operates like Chipotle, in which a friendly server piles on ingredients at your demand. It’s as customizable as pizza gets: you choose the type of crust, the sauce and all the ingredients, which is especially convenient if you’re vegetarian or have other dietary restrictions. Though we arrived at a near-empty restaurant the atmosphere was still lively, with bright lighting and an immediately responsive and welcoming staff.
