Ingredients: (macarons)
⅓ cup granulated sugar
1 cup powdered sugar
1 cup finely ground almond flour
3 egg whites (room temperature)
1-2 drops food coloring (choice)
Ingredients: (filling)
1 ½ cups powdered sugar
¼ cup unsalted butter (softened to room temperature)
3 tablespoons whole milk
Directions:
Preheat oven to 300°F
Line baking sheets with parchment paper
Beat egg whites until soft peaks form, gradually add granulated sugar until dissolved and stiff peaks form
Using a mesh strainer, sift almond flour, then powdered sugar into the cookie mixture, stirring afterwards
Add food coloring for desired hues
Transfer mixture to piping bag and apply to baking sheets
Let macarons stand until dry to touch for approximately one to two hours
Bake in oven until ruffled edges (feet) form and macarons are set (10-12 minutes)
While macarons are baking, beat sugar, butter and milk together in mixer until fully combined and smooth, then transfer to a piping bag
Remove macarons from oven, and place parchment paper on a wire drying rack for 15 minutes
Remove macarons from paper, and apply filling to one macaron, then top with another
